It's been really grey and gloomy around my little part of the world as of late. We decided to go and find our own sunshine in a more sugary form, also known as cupcakes.

I am a coconut gal myself :) I can never seem to convince myself to pick another type when I'm out at shops. I always want to try what each different shop's coconut cupcake tastes like. Outside of my own (and I use Ina Gartner's recipe (the Barefoot Contessa), Sprinkles Cupcakes make the BEST coconut cupcakes.
